Coconut oil is the perfect alternative to butter when you need something to add flavor to a piece of bread, muffin, popcorn, or whatever you usually use margarine and butter for.
In addition to tasting soooo good, it’s incredibly tasty.
One way I like to use coconut oil is to slather it generously on my slightly warmed muffins. It’s a delicious quick breakfast when you’re on the go or a snack throughout the day.
Here’s the coconut oil I use. I love it!As you can see the oil is thin in warm climates.
(I bought this oil from my local farmer’s market. Check your farmer’s market for a good price on oil. Wholefoods and other health food stores also sell the oil. Check out some of my favorite brands here.)
When I use the oil as a buttery spread, I like to solidify the oil. This is easy to do. Just place the oil in the refrigerator for about 30 minutes before you want to use it. It’s a good idea to always keep some of your oil in the frig. That way when you need it, it’s already solid.
Once the oil solidifies, it turns into yummy, creamy goodness. It’s not ready to slather onto your biscuit, bread, muffin, or whatever. This is a carrot and banana muffin. Here’s my muffin before. adding the oil.
