I’ve been inspired the last few weeks to cook everything from scratch for my family. I also have been including lots of raw, unprocessed meals in our diet.
But I was stumped when it came to breakfast ideas. Pancakes and vegan sausage aren’t exactly unprocessed or the healthiest thing to eat first thing in the morning.
And sometimes we want something a little fancier than fruit. So I got in the kitchen and took at look at what we had. Cashews, bananas, and frozen berries.
The perfect combination to make a variation to my no-bake cheesecake recipe.
Here how I made it.
- 1 banana
- 1 lb of cashews
- 1/2 cup of water
- 1/4 cup of coconut oil
- juice from 1/2 lemon
- 2 tsp maple syrup (or to taste)
- 1/4 tsp vanilla (or to taste)
- 1 cup of frozen or fresh organic berries (I used this brand from costco)
Blend the cashews in a blender or food processor until it turns into a fine powder. Slowly add water and blend. Add lemon juice, coconut oil, vanilla, and 1 tsp of maple syrup. Blend until all ingredients are thoroughly mixed. The consistency should be thick like pancake batter. Set aside.
Blend or food process the other tsp of maple syrup with the fresh or frozen berries.
Line a bowl , cup, or mason jar (I love mason jars!) with thin slices of bananas. You can also add other fruits like strawberries. Just make sure you slice them as thin as possible. Add the cashew cream. Top it off with berries. You can also have a little fun and add different layers if you want.
This was delicious. It tasted like a treat for breakfast. My 2 year old daughter loved it too!
