Kids love this recipe!
I just make this up as an afternoon snack for my 2 year old daughter.
It’s amazing how her vocabulary is starting to expand! So today she comes up to me and says, “Ice, Mom.” She loves frozen treats and she calls them “ice.” Usually I’d just give her cut up frozen mango pieces. But today I thought I’d try something different.
I made green ice cream instead. It was so easy to make and only required 3 ingredients
- 2 cups organic frozen mango
- 1/2 cup of coconut milk
- handful of kale
Mix in high power blender and serve. Keep in mind the more milk you use, the more the texture is like a smoothie. The less milk, the more the texture is like soft serve yogurt or ice cream. You’ll have to blend the mixture longer with less liquid to make sure everything blends well.
Skye loved the ice cream!
It tasted like mango sorbet. Delicious! Plus it’s a great way to get more greens into your child’s diet in yummy ways they can’t resist.
