Last year when I was in Northern California visiting family, the hubby and I went to a vegetarian restaurant.
Besides having great food, the restaurant, Herbivore, had delicious alcoholic drinks. They used ingredients like freshly juiced lemon, pineapple, ginger and apple with organic liquors. The cocktails were the best I’ve ever had.
Since that experience, I’ve been combining fresh ingredients to make virgin and alcohol drinks.
Here’s a drink that the hubby actually created from mostly fresh ingredients and it’s delicious!
Looks good. Right? Here’s whats in it:
- 1 cup of vanilla coconut milk (from the carton)
- 1 can of coconut milk
- 1 cup of fresh pineapple
- 1 TB of sweetener (maple syrup or agave nectar)
- 2 cups of ice
- 1/2 cup of rum (optional)
Mix all of the ingredients in a blender. This should make two large servings.We did virgin drinks because I’m still breastfeeding. Feel free to add rum.
Be sure to adjust the ingredients to your own taste. Maybe you want it sweeter or you’d like more pineapple. Don’t be afraid to experiment. Just add a little bit at a time. You can always add more, but you can’t take away if you add too much.
