Yesterday, I was having really strong sweet cravings. I also wanted to make hubby something tasty. But I also wanted to keep it healthy since I’m breastfeeding and focused on loosing my baby weight.
So I looked in the frig and tried to be creative with the ingredients I had.
I knew one thing. In order for my hubby to like it, it had to be chocolate.
So I started with raw chocolate and decided to make a chocolate pie.
It was quick and easy to make. The end result looked and tasted delicious.
Skye, hubby, and I devoured this pie over the last few days.
Raw, Vegan, No Bake Chocolate Pie
- 1 cup of almonds
- 1/2 cup of pitted dates
- 1/4 cup macadamia nuts (optional)
- 2 TB coconut oil
- 1 cup of raw cacao powder
- 1/4 cup of coconut oil
- 4 TB maple syrup
Make the pie crust first. Mix all ingredients. It’s best to mix them in a food processor. But for this pie, I used my Blendtec blender, and it turned out ok. Mix together until the ingredients are chopped, but still have some texture. Taste it. Make sure you like it now because this is what the crust will taste like. To make sweeter, add more dates. To make less sweet, add more almonds. To increase doughy like consistency, add more coconut oil. The coconut oil also keeps the crust together.
Once the crust is ready, press it into a pie plate. Place in the freezer.
Now let’s make the pie filling. Mix all filling ingredients together. I like to mix this by hand. Everything blends pretty easily. And it’s fast and requires less clean up when I’m finished.
If your maple syrup is cold, it may cause the coconut oil to solidify. If this happens, you may need to add 1-2 TB of hot water to liquify the ingredients. Add hot water slowly to ensure you don’t make the filling to thin.
Taste it. This is what the filling will taste like so add more chocolate or maple syrup to adjust the taste to your preference. Once it’s complete, pour into pie plate over the crust.
Place in the freezer for 1 hour and then transfer to frig. You can eat immediately. However, if you leave it in the frig overnight, it taste even better!
This is a great holiday pie. It will give you a dessert fix without the nasty ingredients.
I loved this pie! Especially considering it doesn’t require a lot of ingredients. It does have a dark chocolate taste, which I love! It doesn’t taste like artificial, refined chocolate.
I let my mom taste it and she enjoyed it too! She did say it tasted more like candy than pie. I might add avocados next time to give it a more pie like consistency and taste.
