A long time ago, over 10 years ago, I had a delicious carrot smoothie made freshly at a jamaican restaurant. It was so good, I was thinking about it the other day. The jamaican restaurant was in Atlanta, but has since closed. And I’ve had other carrot smoothies, but none of them came close to comparing to the super smooth and creamy taste of that one carrot smoothie I just couldn’t forget.
So I decided to try and make it myself. Now, I’ve tried to make it before and didn’t do so well. But now, I’m a lot more experienced in the kitchen. Not to toot my own horn, but most of my culinary experiments turn out pretty good these days.
I gathered some ingredients that seemed to make sense in making a carrot smoothie and started experimenting.
The first smoothie I made was it! This smoothie tasted like the carrot smoothie from all those years ago and everyone in the family loved it! Even Skye sipped hers down quickly. Now, I know if hubby and the baby like it, I did a great job.
I’ll share the recipe with you. But first, here’s what the final product look like.
- 1 cup of fresh carrot juice
- coconut milk (I used organic, canned without BPA)
- 1/2 tsp of cinnamon
- 1/4 tsp of nutmeg
- 1 banana
- 3 pitted dates
The first thing you want to do is juice the carrots in your juicer. In the past, I blended the carrots and this completely messes up the texture of the smoothie. So I know it’s a hassle to use both the blender and the juicer, but it’s well worth it, trust me!
Next, put the fresh carrot juice and other ingredients in the blender and blend. If you do not have a high powered blended, you will need to blend 2-3 times to make sure the dates get chopped up well. The last thing you want is to chew big chunks of dates in the middle of sipping on your delicious smoothie.
Once everything is blended well, enjoy! This smoothie is very creamy and so good.
